Which head chef will you work with?
How do you communicate during service? Which decisions do you make yourself? Will you get the support you need? In a sous chef role, working well with the head chef matters at least as much as the menu.
Ask when you will take charge and how you will receive feedback. Is the head chef usually there, or will you run the kitchen for much of the week? You want to understand that difference before you start.
